Restore Exchange 2003 IS to Offline Server???

Is it possible to restore an Exchange 2003 Enterprise Information Store to a different server that is completely offline?  Basically, I have an extra server sitting here that I'd like to test as a Disaster Recovery server for recovering an Exchange 2003 Information Store.  If I can do that, I'll then try and figure out how to grab an individual mailbox and export to .pst.....Possible?  If so, any links to detailed instructions would be MUCH appreciated.  Thanks.
