Windows 2000 Pro User Profile

Having a problem that is puzzling me so I need a some help fellow experts,

Servers: Windows Server 2003 SP1 DC - AD, DHCP, and DNS
Workstations: Windows XP SP2 and Windows 2000 SP4

The problem: The problem I am having is with the Windows 2000 users. When a user restarts their workstation or logs off their profile is recreated when they log back in to the system. This causes all of their settings and icons to no longer be available until I copy everything to the new profile and recreate their email account.

Question: What could be causing this to happen and how to I stop if from happening again?

Login so the new profile is created, then logoff and login as a local admin, rename the new profile to the old name and the old profile to the new name then logoff and log back in as the user.

That is not the answer I was looking for. What I need to know is how to stop Windows 2000 from recreating the users profile

I traced this to two things. First off users that had a roaming profile needed to remove their pst's from the profile as this caused a timeout and would corrupt the profile. Users who did not have roaming profiles seemed to have this issue when ever we did patching. The machines that were patched worked fine, those that had not yet been patched had this issue. We use Altiris to patch, but the same happened when we disabled and used Windows update to do the patching.

I don't have Roamin Profiles enabled any where on my domain so that one is out. I also thought it might be that the machine was not updated with the latest patches too but that's not the case, it's up to date. I don't have autoupdate enabled on my domain due to past bad experiences with letting MS manage updates so I do manaul updates when needed. I know it's time consuming but it works and keeps me from being bored.

It doesn't appear that there is an answer to this question thus far. I will consider this question closed in 4 days if not one else chimes in with a possible answer.
