What is better to use varchar or text?

I have a web app built in ASP running on IIS.   We have a table where we collect data on for records.   On a few fields would it be best to use a varchar or text field type?    The reason I ask is the limit on row size in SQL 2000 of 8060 bytes.    If I use varchar, I eat up my space pretty quick.  

Anyone with experience what is the big advantage/disadvantage of using each?   Which would be your choice?
