Excel 2007 will not consistently print in color

This is killing me

I have an Excel 2003 workbook (opened using Excel 2007).  It has 10 worksheets in it, they are all designed in color.  
I will go "Print" then choose my printer (a color printer).  
I then click "Entire Workbook".  
I then click "Properties..." to open the printer properties.
On the Finishing tab I choose 1-sided Printing.
On the Quality tab I choose Color Mode: Color
When it prints, some of the pages print in color and the others print in black and white.
Some worksheets print single sided while others print back-to-back double sided.

I found that I have to go to each worksheet individually and do a page setup for each one.  I have to set up the printer properties for EACH INDIVIDUAL WORKSHEET.

Why won't this just do what I obviously want it to do?  Simply print single-sided and in color.
