Domain Restructure / Migration

We have a network that needs some desperate restructuring.
Currnelty the company has 3 seperate sites , which have 3 seperate domains. Running windows 2003.
Each site has ONE server which is the DC/DNS/PRiNT/DHCP/FILE!!  server.

The 3 domains are structured something like this  (site 1 (main site)) (site2) (site3)

There are curently no trusts, between any of the sites.
Mail is currently external, so we dont have to worry abou that for now,

The outcome should be as follows
Site to site VPN connection which is not a problem.
Single domain of   they dont want to have a dropdown menu to log into seperate domains, just the one.
File permissions and file struture intact.

My Plan so far was....

Create a site to site VPN link between the 3 sites
Create a trusts between the sites and the main site. (forest or external)
then...... used ADMT (sitll reading up on how to use it) to migrate the objects from site2 and site3 to .. site1's domain, keeping the SID's etc for file permissions.

After this im not sure how to proceed. how do i remove the domains from site2 and site3 while keeping file and user permission intact. Do i need to bring in a swing DC?

AFter the domain is migrated, we have to go to all the comptuers and rejoin them to hte new domain and make sure they can log in and copy theprofiels over, etc.

We have very little time to plan for this project. Its happening this weekend, of aug 25th, I have a VMware test lab that im setting up.

Any help would be amazing..
