Do changed MX records still mean mail is forwarded?

I need to convince someone that switching our domain's host from our host's email service to Google Apps would be beneficial.  They've told me that since they're hosting the MX records they'd still be forwarding email after our switch.  But doesn't the sending mail server just look at the MX record for the domain and then send it there?  Doesn't swtiching to Google Apps completely remove the burden on our host's services?

    MX records are tied to your DNS provider(s). Whoever is hosting the domain name will need to redirect mail Google Aps.
