I installed a second Exchange 2007 Server (Exchange2) during a test, finished the test, and unjoined Exchange2 from the domain. Now when I select Server Configuration | Mailbox, the second server is still listed along with the first one. How do I remove the second server properly?

Re-join the machine to the domain, then remove Exchange from it.  If this isn't possible, you're looking at a messy extraction using ADSI Edit - not something to approach lightly.
