How would I lock down an OU to only permit users contained within in to only be able to connect to a sharepoint website hosted on our network?

You don't do anything at the OU-level to secure SharePoint, the permissions are set within SharePoint itself.

In SharePoint's user management, you define the OU that you want access to the site and that's it.
