Ho do I check Windows Server 2003 to find the version of .NET that's installed?

It's Service Pack 2.

you can search in the registry:
HKEY_LOCALMACHINE\Software\Microsoft\.NetFramework

For a single server, the simplest way would be through Add/Remove programs, or to check the following directory

%windir%\Microsoft.NET\Framework\<version>
