You can deploy Office using a GPO but you can't deploy operating systems using a GPO.  For that, you would need to use Remote Installation Services or some third party cloning application like Ghost.

    Personally I would use Ghost.

Basically what you do is install a system with Windows XP for example.
Install MS Office and any other applications you might need on the system.
Run Sysprep. (Sysprep removes machine specific information such as the computer name and SID)
Then take a ghost image of the computer and save it on a server.

When you get a new PC, install the ghost image and reboot the machine.  When the machine boots, you get a setup wizard asking you for the machine specific info (computer name etc).
