Quickets way to archive an exchange 5.5 server so that mailboxes are still easily recoverable (i.e pst or something like that)

Hi. We have recently migrated to Exchange 2003 from 5.5. We now want to turn off and wipe the old 5.5 server. The problem is there are 2577 mailboxes still on there that didn't get migrated for one reason or another, in most cases the people don't work here anymore. Even though the mailboxes are not in use now, it's possible that someone could call up and ask to view one of them.

How can we archive these old mailboxes so that we can easily recover them if someone calls up? Is there a program that can convert them all to PST's without having to convert them manually one by one? Any ideas would be good. Thanks.
