Exchange 2007 - How many servers needed?

We presently have a domain controller that is running Windows Server 2003 R2 Standard, and it also hosts Exchange Server 2003.

I am going to order a second server (possibly a third, as well) to allow us to migrate to Exchange Server 2007.  I understand that there are five server roles, but I am not sure how this plays into the number of servers necessary to successfully deploy Exchange 2007.

I would like to open up our Exchange server to the Internet so it can host our public E-Mail instead of our current web host, which has poor E-Mail service

My question is: How many servers do I need to deploy Exchange 2007 and achieve our desired functionality?  Can I set up all five server roles on a single server or do I need two or more servers?
