What are the benefits of using ISP MX records and a smart host with Exchange 2007?

I have recently installed Exchange 2007 connected to the Internet via a dedicated DSL line with static IP addresses.  It is configured as my old Exchange server was configured years ago: to use my ISP as a smart host: mail.pacbell.net.  What are the benefits of using a smart host?  If I were to change the Exchange Network setting to [Use domain name (DNS) MX records to route mail automatically], would outgoing mail still be delivered?

Mail is routed to my server via MX records that my ISP maintains on its Domain Name Servers.  I have reason to believe that these MX records are no longer accurate.  What would be the impact if my ISP removed my MX records altogether?  Would my Exchange 2007 Server still receive mail?
