Currently, I have two pattern swatches on my swatch palate. Can I get more? I am actually looking for Christmas themed designs.

Keep in mind that the swatch palettes are attached to whatever file you're working on, so anything you add to them will only add to your working file.  You can get to a number of supplied pattern swatches though.  If you click the menu icon at the top right of the swatches palette, then go to Open Swatch Library -> Patterns you'll get a set of three different kinds of palettes you can look at.  Once you've selected one you can just drag the patterns you want from the palette that pops up into your current swatches palette to attach them to your file.  You can also look into creating your own patterns:
