Migrating Exchange from one server to another

We are trying to migrate email boxes from one exchange server to the other.
Moving mailboxes to the new server is successful.
The problem is that on the users email settings, the new server information does not change to the new email server such as emailserver1.mydomain.local to emailserver2.mydomain.local when the users email box is moved.

How can i fix this

That sounds like either the information the domain isn't updating or you have replication issues. Try moving the mailboxes back, wait and then move them back.
You could look at the HomeMDB value in adsiedit.msc to see if it is being updated, but don't change it - that will cause problems elsewhere in the domain.
