Create a user account with creating a mail or mailbox account

Running Windows 2003 SBS which is also a domain controller  Have setup a demo machine.  Want to add to the machine to our current domain. Can I a create a user account without having to setup a mail box account in exchange.  This machine will only be used for  demo's and presentations.  How do I go about doing this

Start, Administrative tools, Active Directory Users and Computers.
Drill down through the SBS OU until you get to users.
Right click in the right pane and select "new user"
When prompted about email deselect the checkbox.
