I need to be able to track historical CPU usage over the course of a week or so.  There are plenty of programs which will give you a graph of the total CPU usage, but i need to ascertain which processes are eating up the CPU, and when.  so it needs to graph each process i suppose.  would also be good to track each processes memory usage.  this is for a 2000 Terminal Server which is under a lot of load.  Anyone seen any good programs which will help me do this?  can i do it with PerfMon?

Depending on the applications and how they are built, I would start with PerfMon ( performance Monitor ) and use the log to a CSV file. Tons of things can be monitored.
Read the Help to get started , but it may be sufficient if you do not want a third party solution.

I hope this helps !
