I am searching for an Exch admin's dream tool.
Would like to search my stores, find emails greater than xMB and older than y Days, remove the attachment and place it in a file storage server.  The end user has  no clue that it happened unless he goes to look for that email.

Any such dream tool that you are aware of?

We use Symantec's Enterprise Vault... it is not quite as transparent as you are looking for, but it will do the job.

I currently have EMC's Email Xtender and am VERY new at the technology.  (i.e. not installed yet)
Would this do the same thing?  Still shakey at the feature set.

From a quick look at the EMC Site, it looks like it will do the same thing as Enterprise Vault.  The only difference that I can really see from a top level glance, is that EV will allow archiving of much more than just email, where as MailExtender seems targeted to just email.
