Well, several employees would like to access their email through their blackberry/windows mobile phones.  I don't believe POP3 is set up so... how would I go about setting up POP3 so that users can access their emails from the Exchange server?

Start Menu > Administrative Tools > Services : Scroll down and find Microsoft Exchange POP3. Right Click > Properties : Set startup type to Automatic. Hit Apply then hit ok. Right click Microsoft Exchange POP3 again and hit start.

Exit out of services. Startup Menu > All Programs > Microsoft Exchange > System Manager : click servers, then your server name, then protocols, then pop3, then right click on default pop3 virtual server and make sure its started.
