I have a Blackberry Server with about 50 users.

One of the users is away from the office often and has a blackberry. He recently received a new blackberry. He currently has old emails in subfolders of his outlook mailbox that he wants to be able to see on the blackberry.

How can I have the Blackberry server send all these messages and put them in the subfolders on the blackberry.

Either via the BES (folder redirection), or via the redirector settings on Desktop Manager you can select which subfolders to forward to the device.  By default it is set to Inbox and Sent items only.  If you want to change this go into (redirector settings), click the "selected folders" radio button, and then put a check mark in each folder/subfolder needed.  This should allow email that is routed to subfolders of the inbox to be received.

Yes that does work, but now i want to also be able to see messages that are already in those folders. Right now it works for new emails coming in, but old emails do not display on the blackberry. How can I see the old emails already in the folders.
