I have setup a pop3 connector for exchange to download a catch all account allmail@mydomain.com and redirect it to a specific mailbox. I have turned on logging and can see the mail has been downloaded however no mail has gone to the exchange user. The mail has been removed from the pop server and has been downloaded, Is there any way I can recover this mail or find out where it went, there is nothing in the bad mail folder for exchange or the administrator account.

The best way to fix this is to get rid of the pop3 connector and get SMTP mail setup. Pop3 was only there to help the transfer from a p2p network to a Domain. You should ask your ISP to setup the MX records to point at your server, and deal with your emails using Exchange.

I already had smtp mail setup, the users broadband was down so they have a temp fix of a 3g card on the server so i have changed the mail to pop for a short period however I now need to find out if its possible to recover the mails that were downloaded and discarded

Ahh right ok. From my experience, there is no way to recover, the mails just get discarded.
