Defrag the Hard Drives on an Exchange 2k3 server

We're looking to upgrade the disks on an Exchange Server this week.   We're going to image the partition,  swap out then restore.  The partition houses the Exchange databases and according to the OS could do with a defrag.  I can't seem to find anything on defragging the disks on an Exchange server.  Is it ok to do, any gotchas??  Or shall we  just restore the drives as they are.
