Exchange 2007 Transition  Installing SP1 & Second E2k7 server

We are about to install a second Exchange 2007 server into our organisation. We have 3 sites, and currently have legacy Exchange 2000 servers in all 3 sites, and our new E2k7 server already installed into out local site (Hub, CAS, mailbox roles). We are therefore currently in co-existent mode.

Next stage of our deployment includes:
a.      Deployment of Exchange 2007 servers in our other sites
b.      Upgrade to Exchange SP1 in our local site

Can we install E2k7 SP1 straight into our remote sites?
Do we need to upgrade to SP1 in our local site before installing E2k7 SP1 in our remote sites?
As Im concerned about how mail will be routed between site, can you point me to a reference specifically to research installing a second E2k7 server?
I need to implement a DR strategy for both  can you point me to a reference?

Thanks for the links and the advice that I can install E2k7 SP1 in our other sites.
The articles provide good theroetical base, but I am concerned, after having prepared AD for SP1,  about whether I should install the the remote site also as Hub Transport?
Can we install the remote site with Hub Transport role as well? External mail currently routes through our E2k server here and then onto E2k7. Can we have more than one HT server in the organisation?
OK - a bit preemtive there - got the answer:

"You must deploy a Hub Transport server role in each Active Directory site that contains a Mailbox server role. Deploying more than one Hub Transport server per site provides redundancy if a server fails. When you install more than one Hub Transport server in an Active Directory site, the connections are distributed."
