Quick Step by Step instructions for setting up Exchange 2007

Do you know a web site that has simple step by step instructions for setting up Exchange 2007 with a basic configuration?
I have Exchange 2003 on a server and installed Exchange 2007 on an other server. I do not care about upgrading Exchange 2003 so I can start from scratch with 2007.
I did an install, but I dont know how to put the new Exchange to work.
Ive added to Organization Configuration | Hub Transport | Accepted domains the domain and set its MX to point to the server.
Whats next?
Where do I activate SMTP and how can I make the first test to see if it receives and sends emails?
I just need a jump start&
