How to troubleshoot time stamp email delay issues in Exchange

Hello,

I have a manager who claimed he sent an email to a staff this past Monday 1/4 and he has the email in Sent Items to validate this.  On the staff's computer, the same email show the sent time was this morning Wednesday 1/6.  

Any one has any idea how to troubleshoot this?  All my queues in Exchange are empty so I don't know how to go from here.  Please advice.

The time stamps on the emails depend on the local system time. Please check the system times of both the users.

The time stamps are correct on both computers.  Furthermore, I believe the manager did sent the email this past Monday 2/4 (sorry, should be the month of February, not January).

What is the time-stamp it is showing on the email of the recipient whether it is showing the sending time or the receiving time?
