is the field data type datetime or varchar?
if its datetime, my suggestion has to work.
if its varchar, why not datetime?

so, in case you don't want to get that changed:
UPDATE yourtable
   SET yourfield = CONVERT(VARCHAR(20), DATEADD(day, 2, CONVERT(datetime, yourfield, 120) ), 120)
