Default settinging will not allow me to recieve email from internet

Hello All, I've just installed exchange 2007 and I cant seem to get email from the internet. I have checked anonymous login etc. Under accepted domain I have  mail.xxxx.com. When I add another accepted domain with the third option external relay. I can recieve email but everyone in world try's  to relay "Open Relay".
Looks like it turns into a big spam machine wth all those queues building.
So is there document that can show me how to make this work, this is not a special setup. I could do exchange 2003 with my eyes closed.
Any bone will be much appreciated!

Ok Guys, All I can say is Daaa, I have been working to much.....I forgot to put in and External Relay for the domain under Organization Units /hub transport/accepted domain.
