XML Encoding

I am working with XML data and one of the things I do is parse through the XML content and assign the innertext values of the appropriate XPath entries to some strings in a class... the trouble is that some of the characters are encoded... such as &  Is there a simple way to handle this.. so say

<item>YOU &amp; ME</item>

will read in my class

public class myStuff
   public item as string
end class

as "YOU & ME"

I wear a lot of hats - Developer, Database Administrator, Help Desk, etc., so I know a lot of things but not a lot about one thing. Experts Exchange gives me answers from people who do know a lot about one thing, in a easy to use platform." -Todd S.
