Step by step guide to disable Outlook Exhange from an Outlook desktop client

My company has switched from Outlook Exhange to another mail system and I need to disable my Outlook Exhange account but keep all calendar posts and emails. I have setup my normal (non-Exhange) account, but need to disable the Exchange connection without losing mails and calendar appointments in my Outlook client.
Can I get a step-by-step guide to do so? I have tried Microsoft's support, but it doesn't seem to answer this question.

Just export everything in a format your new system can accept (if you're still using Outlook you can export to a .pst file), then erase the Outlook profile, then import.
