Configuration of MS Exchange Server on SBS

I am with a small company running Exchange Server on SBS. I did not originally set up the system and am not that familiar with Exchange Server. Currently email for 5 users is managed using 5 seperate pop3 mailboxes at our hosting company. As 5 mailboxes is our limit, and we need more, I would like to be able to send mail for several users through 1 pop3 mailbox and let exchange deliver to the correct mailbox. I am assuming this is possible but cannot find anything on how one might go about it.

Half my problem is that I am not fully sure how it was set up in the first place. Nowhere on my exchange server can I find the settings that tie my users to their mailbox and ultimately to their pop3 mailbox. I'm sure I'm just looking in the wrong place.

So, I'm hoping someone can tell me if it's possible to route mail for sevreal users through 1 pop3 mailbox and also point me in the direction of some good (idiot proof) online documentation on configuration and maintenance of MS Exchange server on SBS.
