How do I replace national charactes ?

How do I replace national charactes in a nvarchar(100) collation Latin1_General_CI_AS field.
I want to replace the Norwegian characters æ ø å with a o and a respectively. I have used the sql statement replace(columnName,'æ','a'). The problem is that this statement, in addition to converting the letter æ to a, also converts all words with the characters 'ae' to a.

Hi,

Does it matter what is the character set of your database ?
I used both convert and replace function together but could not replace the special character as asked
