Removing Exchange 2000 Server after upgrade to 2003 disconnects users from their mailbox

Installed Exchange 2003 Server Standard on a New server, moved / migrated users to new exchange server.   Would like to remove Exchange 2000 Server from network.   I can stop all the Exchange services on the old server and everything keeps running.  However, if I turn the old server off, users are disconnected from their mailboxes.   What am I missing on the old server?

Are the user's profiles still pointed at the old server?

user profiles are pointing to the new server.  All mail is being stored on the new server.
