Changes to the meeting cannot be saved.

We are currently using Outlook 2007 and we have had several users including myself get an error message when trying to update and send a calendar invite.

The error does not occur everytime but occasionally.  One user says that she sees it weekly, but she schedules a lot of meetings.

The message is:
Changes to the meeting cannot be saved.  The meeting has been updated by another person.  Close and reopen the meeting, and then make your updates.

The problem continues even when you close and reopen the invite.  Closing and opening Outlook again seems to fix the issue but the user is not satisfied with that answer.

SP-1 is applied to the 2007 Client.

I have seen the article -this fix is rolled up into SP-1 from my understanding.

I have attached the screenshot of the error to the post.

Yes the DST patch is applied to Windows, Exchange, Outlook client.

I'm having the same problem.
Outlook 2007 SP1 with DST patch applied.  Happens in both Online, and Cached Exchange Mode.
I am having this issue with a couple of users too.
We removed the VBA for Outlook Addin and it fixed the issue.  

go to Tools -> Trust Center -> Add-ins -> and Go for manage COM Add-ins

and remove the VBA for Outlook Addin.
Microsoft broke the ability to accept meeting requests after a new time has been proposed.  Apparently they broke this in SP1 for Office.  The details of the article are here;en-us;955450&sd=rss&spid=11335.  The patch that resolves this issue is here \\fcslg.local\root1\it\Microsoft\Office\OutlookPatch.  Close all Office related applications and run this executable office-kb957909-fullfile-x86-glb.exe.  Since this does not occur for everyone Microsoft has not released this officially as part of a WSUS deployment.  We will figure out the best way to get this out to everyone.  In the meantime, this is the fix.
