Problem in Sending Email for Custom Entity

I have created a new custom entity named "Employee" that contains employee info in CRM 3.0. My problem is I cannot send email to a "Employee" custom entity because the To field does not populate and I cannot select the "Employee" custom entity in To field lookup value, because there is no "Employee" custom entity dropdown menu in Microsoft Dynamics CRM 3.0

Oh OK then, thanks for your info jd_wight.
Yesterday I was thinking that maybe I can colaborate my "Employee" custom entity with my "Contacts" system entity. So when we want to send an email, we can grab the recipient from the "Contacts" entity and put it into "To" field.
My question is: what should I do if I would like for each of the new Employee record I created in my "Employee" custom entity will also be added automatically in "Contacts" system entity. It means that when we created a new employee record in "Employee" custom entity, that new record will be added automatically in the "Contacts" entity. Could someone tell me step by step to do this, since I'm just new to Microsoft Dynamics CRM.
