How do I mount information store, if it will not allow me?

Unable to mount Mailbox Store and Public Folder Store. Receiving an internal processing error. How do I resolve this issue?

Are your databases oversize?  I think though if that were the case they mount for a while then unmount again.  It may be worth running isinteg as shown in http://www.msexchange.org/tutorials/Exchange-ISINTEG-ESEUTIL.html.
Also are there any other events in the Application log?

Have you tried giving the server a reboot? I know thats probably a daft question, but worth checking.

Yes the server has been rebooted, but still unable to mount database
