I've just bought a new server to replace my existing exchange server. Can anybody tell me whether I can run my exchange cd and then go straight to SP2 or do I need to put SP1 on first?

SP2 includes SP1 changes as well so to answer your question, SP2 can be installed without installing SP1 first.
