In Illustrator how do I change the text box shape. I want the look to be fairly irregular. Meaning not a circle, rectangle or triangle, etc.

The control points of a text box behave the same way as a regular object. You can select them with the direct selection tool (hollow arrow) and drag them around. You can add points and delete points. You can use the "Convert Anchor Point Tool" (in with the pen tools) to change a corner point to one with Bezier control points so that you can make curves.

It's a lot of fun to work with because your text changes and flows into the new shape as you move the points.

Notice that this is for a text box and not type on a line. You are more limited in what you can do in that situation.
