Are there logfiles that might explain why the service is failing? Uninstall/reinstall? Where did you download from? I'd get a fresh copy from the vendor: http://www.redstonesoftware.com/downloads/Vine3.0.dmg

Failing that I'd be tempted to spend $35 on the supported osxvnc here: http://www.redstonesoftware.com/store/ This only includes web based support unless you buy a "support incident pack"
