Remove default recipient policy

I have recently installed a new Exchange 2007 server and am in the process of migrating away from my Exchange 2003 server.  I have a recipient policy in place on my Exchange 07 server that seems to be working fine.  However, the default policy from my Exchange 03 server is also aplying itself to my users.  I would like to remove that default policy from Exchange 03 and only use my poilicies that I have set up in Exchange 07.  I have already migrated all the users to 07 and am only hanging on to my 03 box until I can move my public folders, then it will be removed.

Thanks for the extra info on removing my Exchange 03 box.  That would have been my next search on EE.
