Possible to add pre Outlook 2007 support post Exchange 2007 install?

Recently my partner migrated the company to Exchange 2007 which went well until yesterday when he removed any references to the old Exchange server (pre 2007) which up until yesterday was still online. Now all Outlook 2003 clients report the error (Your Exchange server Administrator has blocked the version of Outlook that you are using). He does not remember an option during install asking to support pre Outlook 2007 clients so our assumption is that it did not get selected.

Is it possible to add this support post install and ensure that nothing has been lost in the process? What are our options at this point?
