Mac OS X 10.5 commands to backup config files (Directory, network config etc) for server recovery.

We run a Apple Xserve on OS X 10.5 for email, we do not have backup software at the moment and the server crashed once possibly due to faulty Raid controller card.

As a precaution, what is the unix commands to backup critical server config files? network, open directory, email config files? e.g. copy them to .\backup\

I understand for Open Directory (Standalone Master), I need to stop the services before I perform a backup as it is a Database.
