Contemplating Win 2003/2008 server at Rackspace. Trying to work through the implications of remote install and remote operation of QuickBooks

Quickbooks Premium (QBPre) is networkable, and the host machine (the one with the data files) must have an installation of the program and can't be just a file server. I'm contemplating setting up a Win 2003/8 server at Rackspace and I'm trying to figure out (1) How to do a remote installation of QBPre, or any other windows program, and (2) What kind of surprises I should be prepared for when we try to VPN in. The VPN is hardware, actually part of a hardware firewall.

To summarize: How does one do remote installs? And what kind of quirks does VPN tend to have? Bonus points if you've used QuickBooks on network.

ALSO: HOW MANY OUT THERE HAVE NOTICED THAT VIRTUALLY ALL THE PST / MST / CST / EST DESIGNATIONS ON THE EX-EX.COM TABLE SHOULD ACTUALLY BE PT / MT / CT / ET?  Drives me bats!
