Setting levels of access via Terminal Server Gateway

Is the following scenario easily accomplished (for someone)?

For each user accessing machine via Terminal Server Gateway:

1. Allow access to only the data within their specific folder.
2. Allow them to run Word (assuming properly licensed) on server and only save changes to the server. ie no local saves, no local printing etc.
3. Click a hyperlink within the Word document that would open an acrobat document in Acrobat Reader. (OK to use free Reader on Terminal Server?) Can it be set to not allow saving, printing locally?
