You can try the instructions for XP in my following links, but I don't think you'll be very happy with such an installation, and it is also quite difficult to achieve. You'd be better off installing Linux to USB drives, Windows isn't meant to run off USB.

- You can clone a current windows 2003 system to usb drive using Acronis or Norton products. This way should easier.
- You can cave the drive on a system, install 2003 on it and then cave the drive in usb enclosure.
