Database offline defrag

Windows Server Standard 2003 running Exchange Standard 2003 - Our store.edb was 75gb in size. I dismouted the store and did a defrag of the store using the eseutil tool. It completed but the size only decreased by 3gb. I've added up all of the mailbox size in Exchange Manager and they do not equal the size of the database. As of right now the following are the sizes before and after: What can I do.
Before Defrag:
store.edb = 65,849,800 KB
store.stm = 24,312,960 KB
After Defrag:
store.edb = 64,868,360  KB
store.stm = 22,726,664 KB

I also noticed that the log files are not automatically deleted from the MDBDATA folder. Where do I set this?

I calculated all of the mailboxes and they currently add up to 18,962,173 KB

Now the logs get flushed once a full database backup is done - your backup software should have a spcification stating such (flush logs after backup)  This should get rid of the logs.
Now do you have something like journaling enabled or message tracking enabled?  Both of these will take up space.  Also are there accounts in AD that are diabled?  Their mailboxes also still take up space.
In ESM you can purge any mailboxes that are in pending deletion status

This should help http://support.microsoft.com/kb/240145
Maybe some more help

No we are not using journaling or tacking. I don't get it. The mailboxes only total 19gb how can the size of the store.edb show 64gb?

Do you have disabled users?  Look back in ESM no red x's next to people under the mailbox store?

No. All users are good. The problem is I get a message stating
"Exchange store "first Storage Group\Mailbox Store". The Logical size of this database (the logical size equals the physical size of the .edb file and the .stm file minus the logical free space in each) is 83gb. This database size has exceeded the size limit of 75gb. If the logical size of theis database is not reduced to less than the maximum size limit this database will be dismounted the next time a databasse size check is performed."

The store is dismounted every other day around 5am. Does anyone have any sugestions why the .edb shows 64gb and the mailboxes only had up to 18gb even after the offline defrag?

If the log files are not apply to the .edb could that mean that they .edb doesn't know that mails been deleted? If so, how do you apply a log file? Just shooting in the dark.

I've noticed in the Exchange Manager on the database tab for the mail store it states that a full or incremental backup has never been done. I'm assuming it's talking about an online backup. I back up to tape everynight with Veritas but is this refering to another backup and how do I run it?

Your software isnt telling exchange a full backup has been done therefore exchange isnt purging the logs files.

You can manually remove them and then see if full backups will purge going forward
http://support.microsoft.com/kb/240145/en-us

You can also test the log files to see if something is wrong with them
http://support.microsoft.com/default.aspx?kbid=248122

Also why not try a full NTBackup to see if this will purge the logs
