Management of photo store - thumbnails, automated process

My wife and I take a lot of digital photos.  At present we download the photos from the cameras and then move them from our local machine to a NAS file store. From there we can both access the photos and do what we want with them.  On the NAS we store the pictures in a simple date based structure 2008>January>21-January-2008 etc etc

What I would like is to have an automated way to create a reduced version of the entire tree of photos so I have something like NAS>Photo Store>2008>January.......  and also a separate "copy" of the same tree but with thumbnail versions NAS>Thumbnail Store>2008>January.....

This would then also mean I can easily synchronise just the thumbnail folder with my laptop and have a small version of the photos available when I am mobile without needing to have space for the full contingent of all the photos.

Ideally I would love an automated method so that when I add photos for July it will create the thumbnails by detecting what is new but even if I have to run a batch file or something similar that would be fine.  I am not a developer so don't want to code anything myself.

Any ideas and suggestions greatly appreciated.

Thanks for the suggestion.  While this kind of solution works for a one off perspective, it can become quite cumbersome for a large collection and having to rerun for the whole lot each time (although I suppose I could just run it on a monthly basis for the current/previous month structure).  The current collection is about 150GB so looking for something that can help with the progressive nature.
