w2k3 - I want to move my store/mailboxes to a totally new exchange server in the same domain. Do's and Don'ts?

Please point me in the right direction.  I would like to at least test it first.  What is the right method?  Create a new exchange server in the domain right?  best practices before adding it?  Pitfalls?  Thanks.
