creating an additional e-mail address for a home user

we have a single windows 2003 server using microsoft exchange and outlook 2003 clients. All is working fine. However, we now have a new home user who would like to send and receive mail at home using outlook 2000. All mail is currently sent to our exchange server.
How do we therefore get mail sent to this user, using our single domain name, and also send mail out using our own domain name from this single remote home location. (Obviously we alread have a broadband connection at this new location).
