In Delivery options you have the option to forward all email to another user. This can be a Group, a User and an External Contact.<br />

All email destined for this user will reach both locations as long as you tick the box to deliver to both locations.<br />

Yes. If you go to active directory users and computers on the exchange server, open the user whose mail you want to forward, go to the Exchange General tab, and select the button Delivery Options. You can set forwarding there.<br />

If you uncheck the box that says deliver to both locations, all mail will be forwarded to the selected recipient. Barring setting a conditional forward rule in Outlook, I don't see another way to forward mail from just a particular user.

As Keiran B suggests, it if is sender specific, i.e. mail from joe.bloggs@domain.com, you will need a 3rd Party Application that can handle Journaling and eventsink. I would suggest looking at thrid party applications such as Exclaimer for Exchange.

I think you can use Transport rules for this if it was Exchange 2007.
