How to setup an company general exchange mailbox for multiple users and keep track of who has answered the emails

I am setting up Exchange Server 2003 for an organization that uses for a general mailbox that users ask questions to.  They have 3 or 4 people that monitor that mailbox so that they can keep on top of answering the users questions.  My question is how do I set up an exchange mailbox for sales that will deliver the email to the appropriate users and then keep track of when a user has responded to a question?

Currently they use IMAP through their existing email provider and when someon answers a question, they delete the email which draws a line through the email which the other users can see and know that the email has been answered.  Should I set it up the same way or is there a better way?
